I made my way over to an amazing cafe today, A bite of Belgium located in Las Cruces, NM. It was my first time eating here and I had an amazing experience. The staff was super friendly, I was so excited to be taken through this Belgium food journey.
I am a fan off sweets but I ordered their special filled with New Mexico favorites. Two eggs any way, choice of ham, bacon, or sausage. Potatoes seasoned to perfection and squash mixed with corn topped with avocado. On top was a crisp piece of cheese, it gave the dish a crunch with a cheesey flare. Last but not least the special came with a waffle, you have your choice of cream. Raspberry cream, orange cream or espresso… Which one to choose, I chose raspberry.
My food came out and I couldn’t wait to dig in. The New Mexico special was amazing combinations of flavors. I saved my waffle for last, let me tell you the raspberry cream was one of the most incredible things I have ever eaten. As I was enjoying every bite of waffle dipped in raspberry cream. I wanted more waffles and a tub of the cream.
A bite of Belgium also serves lunch I saw several lunch options come out to guests that where dinning and they looked amazing as well. I can’t wait to come back!
